I have been in the industry for over 20 years now. My desire to work with children came at an early age of 15. I started to do voluntary work after school, at the children’s hospital at Renwick. I knew then that I wanted to be around children and pursue this as a career. I have worked with children with additional needs and in all age groups.

I currently work as a cook at Little Troopers and enjoy this immensely.

What do you enjoy most about your job?

Seeing the children’s reactions when eating is so heart-warming, and their comments are even more beautiful. Such as “thank you for the food my darling” and “you can come home with me and cook my dinner”. It’s just so precious.

Share a favourite recipe:

‘My favourite recipe is Chicken Chow Mein. This is one of the children’s favourites too!

All you need is:

2 cups of water or chicken stock if you have it

1 cup frozen mixed vegetables

1k chicken mince

3 garlic cloves diced

1 table spoon of unsalted butter

1 onion diced

¼ cup soy Sauce

½ cup oyster sauce

2 teaspoons cornflour mixed with a little water

2 teaspoons of chicken stock powder or if you have chicken stock use 2 cups

1 packet spaghetti cooked separately

Boil pasta, strain and set aside.

Melt butter, add diced onion, garlic and cook till brown.

Add chicken mince, cook for 10 minutes and add vegetables. When the chicken and vegetables are cooked add the oyster sauce, soy sauce and chicken stock powder.

Stir and cook for another 10 minutes on low heat and add water. Let it simmer then slowly thicken with cornflour.

Add the pasta to the chicken mixture.
